The Salisbury, Covent Garden, London

Situated in one of Covent Garden’s oldest listed buildings,
The Salisbury is a testament to Victorian largesse. The premises opened
as a pub over 100 years ago and boasts stunning Art Nouveau light fittings as well as great food, an impressive range of beers and bucket loads of character.
The challenge
The pub’s listed status was a key reason for our involvement. The pub’s design and location meant that traditional cellar coolers, with large external heat dumps, were out of the question. The bar were using a water-cooled refrigeration unit, but because the water from it was going straight down the drain, so was around £8,000 per annum.
There was also the issue that the heat from the beer coolers was being pumped into an internal corridor in the premises, meaning that over the summer the temperature in this part of the bar regularly exceeded 40c.
The building was heated by a gas boiler, which provided hot water not just to the pub’s kitchen, but also to the flats above. Hot water elsewhere in the bar was supplied by an electric emersion heater.
The installation
Geo Bar installed two heat recovery cellar coolers, as well as capturing the valuable heat generated by the beer coolers. The recovered heat was used to provide the entire building with a constant supply of free hot water. Additional savings were achieved as heat from the coolers, which was previously being pumped into the corridor, was being captured and used. This not only made the area more comfortable for staff, but also meant that white goods in that part of the bar operated more efficiently – which led to a reduction in running costs.

Doctors, Edinburgh
The bar

Situated in the heart of Edinburgh’s university district, Doctors is known for its warm welcome, hearty bar meals and impressive array of real ales.
The challenge
There were a number of issues giving the bar’s manager a real headache. Firstly, the pub’s listed status meant that the cellar cooler heat dumps where located in a corridor and causing a major build up of heat. Secondly, the building’s limited downstairs space meant that numerous white goods, including freezers, ice machines and fridges were all close together and the heat they generated regularly forced the temperature up to uncomfortable levels. Added to the internal heat dumps, this meant that the back of house area was seriously over heating.
Because of these artificially high temperatures, the bar’s refrigeration units weren’t just having to work harder than normal to keep things cool, but also they were unable to achieve optimum performance.
This in turn meant that the cellar coolers weren’t performing well, making properly conditioning the cask ales a problem and making it difficult for the bar staff to get the other beers into the glass.
The installation
Geo Bar installed two heat recovery cellar coolers, one in the cellar and one in the white goods room. We also set up a system to capture hear from the beer line coolers. The recovered heat, which was previously causing problems, is now providing hot water to the kitchen and heat to the bar area. And as an added bonus, the staff are now enjoying more comfortable working conditions and a properly cooled cellar.
